Preparation
Clean the Snake gourd wash and cut into pieces as shown in picture, Remove the seeds and inside portion. Mix some sea salt (Indupu) with lemon juice and rub it in and out of each piece and keep aside. Grind Chilly Powder, Turmeric Powder, coriander Powder, Cloves, Cardamom, Pepper, Cinnamon, Garlic, Ginger Paste and Big Jeera, curry leaves and coconut into a smooth paste. Saute the onion in coconut oil and add the ground masala; saute it till the oil shows up, add minced meat, potato and salt, saute very well until the mixture leaves the sides of the pan and oil shows up while good odor spreads. Coconut and potato are not necessary, if you want to make it only with minced meat, you can do so; only quantity of the meat should be increased. Once ready remove from fire and keep aside to cool. Fill all the pieces with the prepared masala. Break the egg, beat and keep aside.
Pour one table-spoon coconut oil in a pan and heat it. Take the filled bit of snake gourd dip one side in egg and put in the pan as in picture. When the egg turns slightly gold in colour, take the bits and dip the other end in egg and fry. Once ready just roll the whole bit in egg and put into the frying pan lengthwise as in picture, cover the pan and keep on slow fire, turn it as it gets fried. Must turn and put all the sides and fry till it gets cooked and the snake gourd
bits become soft and slightly golden. This is a super tasty dish which all especially kids who don’t like vegetables will enjoy.
