  • 3 cups good quality Raw Rice (Unakalari/Pachari)

  • Salt, to taste
  • 2-3 Small Onions
  • 1-2 cloves Garlic (optional)
  • 1 teaspoon Cumin seeds (Small Jeera)
  • 3 tablespoons Cooked Rice

Wash the raw rice and soak it for 1 to 2 hours. Drain the water and place the rice in a blender.

Add scraped coconut, sour toddy or yeast (soaked in warm water), salt, small onions, garlic (if using), cumin seeds, and cooked rice to the blender.

Grind the mixture into a smooth paste. If needed, add a little water to facilitate blending, ensuring the batter remains thick.

Transfer the batter to a deep vessel and let it ferment for 6 to 8 hours. The fermentation time varies with weather conditions; it ferments faster during warmer temperatures.

Heat a frying pan on low flame. Once hot, grease the pan with ghee, coconut oil, or any preferred oil to prevent sticking.

Pour 2-3 tablespoons of the batter into the pan and use a spoon to spread it evenly, forming a round shape. Cover the pan with a lid.

Allow the Kallappam to cook until the edges turn golden brown and the center is cooked through. It should have a slightly crispy outer texture and a soft inside.

Serve the Kallappam hot with your favorite accompaniments.
