During the jackfruit season in Kerala, we indulge in various dishes made from both raw and ripe jackfruits. Here’s a unique and delightful recipe I created using ripe, soft jackfruit that tastes as heavenly as ice cream. Don’t worry; you can also use the firm variety of jackfruit if you prefer.

  • 2 cups of Ripe Jackfruit Paste (Remove the seeds and grind the pods in a mixer)
  • 4 tablespoons of Melted Jaggery
  • 2 cups of Rice Flour
  • 2 or 3 pinches of Cardamom Powder
  • 1 teaspoon of powdered Cumin Seeds (small jeera)
  • ¼ teaspoon of Salt
  • 1 teaspoon of Ghee
  • Cashew Nuts for decoration

Mix the first six ingredients (jackfruit paste, jaggery, rice flour, cardamom powder, cumin seeds powder, and salt) thoroughly until you get a smooth batter. Use the salt judiciously to balance the sweetness of the jaggery; too much salt can spoil the taste.

Grease a dish with ghee and keep it ready for steaming. For those who love the flavor of ghee, you can add a bit more, but don’t overdo it.

Spread 1 tablespoon of jaggery at the bottom of the greased dish.

Pour the prepared batter into the dish and decorate it with cashew nuts.

Steam the mixture for approximately 20 to 30 minutes. To check if it’s cooked, insert a fork or knife; it should come out clean.

Once cooked, switch off the stove and allow it to cool. Then, cut the pudding into pieces and serve.

The result is a mouthwatering and luscious dessert that you’ll adore. I highly recommend making this during the jackfruit season – it’ll leave you craving for more! It’s an absolute delight for kids and all jackfruit enthusiasts. Give it a try, and I guarantee you won’t be disappointed!
