


Ayyooo!!! Have you thrown out the left over rice after lunch or dinner? Oh no!!! Here is an Adipoli recipe which can be used to convert the rice into lovely custard which children will grab and eat.
Ingredients
- Cooked rice – 1 Cup
- Coconut – 2 Table spoons
- Coconut milk or milk – 1 Cup
- Brown sugar/Honey – 2 Table spoon or more
- Turmeric Powder – ¼ Teaspoon (Just for color)
- Cardamom powder or Vanilla Essence – ¼ Teaspoon
- Salt – 1 Pinch
- Cashew nuts – Just to decorate (optional)
- Cherry – For decoration
Preparation
Grind the rice and coconut into a smooth paste and keep aside. In a saucepan add the milk and sugar stir well till the sugar melts (if using honey add and stir well). Now add the ground paste along with the turmeric and mix well. Keep on slow flame and cook stirring now and then. Once it begins to thicken add salt just to balance the sweetness, stir continuously till it becomes very thick.
Sprinkle cardamom powder or drop vanilla essence and remove from the fire. Empty the content into a bowl and decorate with cashew nut and cherry. When cool serve as it is or chilled. Use honey or sugar according to your taste. I used very little because I like medium sweetness.
