Indulge in the delightful flavors of Idiyappam, also known as String Hoppers, a traditional South Indian dish that’s incredibly easy to prepare. Made from roasted rice flour and grated coconut, these delicate strands are perfect for breakfast or tea time.

  • 1 cup (250 mL) Roasted Rice Flour
  • 1/2 cup Boiling Water
  • 1 cup Grated Coconut (optional)
  • Salt, to taste

Preparation Time: 5 minutes Cooking Time: 15 – 20 minutes

In a pan, combine the roasted rice flour and a pinch of salt. Mix well to ensure even distribution.

Gradually add the boiling water to the flour mixture, stirring continuously. Mix until the dough comes together and no longer sticks to the sides of the pan. The dough should form a cohesive, non-sticky ball (like the dough for baking).

Roll the dough into a ball, and if needed, adjust the quantity of flour based on the number of servings desired. This recipe yields around 4 Idiyappam with 1 cup of flour.

Take an Idiyappam maker and open the lid. Fill it with the prepared dough.

Cover the Idiyappam maker with the lid and press the dough in a circular motion onto an idly plate, forming thin, delicate strands.

As you fill the maker halfway, sprinkle grated coconut over the strands. Continue pressing the dough to cover the coconut, and finish off the dough. (Make sure that the coconut doesn’t fall into the strands maker, otherwise the holes will get blocked with coconut.)

Place the idly plate in a steamer and close the lid. Steam the Idiyappam for about 15 – 20 minutes until they are cooked and firm.

Once the Idiyappam are steamed, turn off the stove and carefully open the steamer lid. Allow the Idiyappam to cool slightly.

Gently remove the Idiyappam from the idly plate using a spoon or knife and transfer them to a serving dish. This dish is very soft like cooked noodles.

Coconut is optional. We use coconut only when we prepare them for evening snacks because the children like to eat with coconut milk and honey, sugar or jaggery.

Idiyappam can be paired with a variety of accompaniments. Serve them with egg, meat, or vegetable curries for a savory meal. Alternatively, for a sweet option, relish them with coconut milk and honey. Some also enjoy Idiyappam with sugar, although this might not be the healthiest choice. This versatile dish is perfect for breakfast or tea time, and its simplicity makes it a cherished snack for all ages. Some eat them for lunch or dinner especially in parties.
