🥔 Ingredients
- Cooked Potato – 4 nos (peeled and smashed)
- Finely Chopped Onion – 1 (optional)
- Curry Leaves – 5 leaves
- Ginger – 1 piece
- Garlic – 5 cloves
- Green Chilli – 3 nos
- Turmeric Powder – 1 teaspoon
- Pepper Powder – 1 teaspoon
- Salt – to taste
- Gram flour – 1 cup or as required
- Oil for deep frying
👩🍳 Preparation Method
1. Prepare the Potato Filling
Peel and smash the cooked potatoes and keep aside.
Heat 1 tablespoon oil in a pan.
Add chopped onion (if using), garlic, ginger, green chillies, and curry leaves.
Sauté until aromatic.
Add pepper powder, turmeric powder, and salt.
Mix well and sauté for 2 minutes.
Add the smashed potatoes and sauté until everything comes together and oil begins to show on the sides.
Switch off the flame and allow the mixture to cool completely.
2. Shape the Vadas
Once cooled to room temperature, make small balls or flat patties from the potato mixture.
3. Coat and Fry
Mix the gram flour with water add salt, turmeric powder and pepper powder. mix and make a smooth paste not too thick or watery. Should have the consistency to form a thick coating.
Dip each potato ball into the batter.
Heat oil in a pan and deep-fry the Vadas.
Turn gently and fry until both sides turn golden brown.
Remove and keep on a plate.
4. Assemble the Vada Pav
Steam and slice the wheat or multigrain pav.
Apply a little butter, chutney, sauce if desired.
Place one hot potato vada inside the pav and serve immediately.
