Ingredients
For the Cutlet Mixture
- 1 cup cooked boneless chicken, minced or finely chopped
- ½ cup cooked and mashed potato
- 1 onion, finely chopped
- 1 green chilli, crushed
- 5–10 curry leaves
- 3 cloves garlic, crushed
- 1 small piece ginger (about 2 inches), crushed
- Salt – to taste
Spices
- 1 teaspoon chilli powder
- ¼ teaspoon turmeric powder
- 3 cloves
- 1 cinnamon stick (2 inches)
- Seeds of 3 cardamom pods
- 1 teaspoon fennel seeds (saunf)
For Frying
- 3 tablespoons oil (for sautéing)
- 1 cup multi-grain bread crumbs
- Oil – for shallow frying
Method
- Heat 1 tablespoon oil in a pan.
- Add chopped onion and sauté until soft and translucent.
- Add crushed garlic, ginger, green chilli, and curry leaves. Sauté for 2 minutes.
- Add chilli powder, turmeric powder, cloves, cinnamon, cardamom seeds, and fennel seeds.
- Sauté until the spices release aroma and no longer stick to the pan.
- Add minced chicken and salt. Cook on low flame for 5–10 minutes.
- Switch off the stove and allow the mixture to cool.
- Add mashed potato and mix well to form a uniform mixture.
- Shape into cutlets.
- Roll each cutlet evenly in bread crumbs.
- Heat oil in a pan and shallow fry the cutlets on medium flame until golden brown on both sides.
- Remove and place on a plate.
