When you’re feeling lazy but still craving something delicious, this curd curry will be your go-to. No cooking required, just mix, season, and enjoy!
Ingredients:
- Curd (Yogurt) – a bowl full (depending on how much curry you need)
- Water – to adjust consistency
- Salt – to taste
- Shallots – 2–3, finely sliced (small onions work best!)
- Curry Leaves – a handful
- Dried Red Chilies – 1–2, broken into pieces
- Optional: ½ tsp Red Chili Powder (for color)
- ¼ tsp Turmeric Powder
- Oil – 2–3 tbsp
- Mustard Seeds – 1 tsp
Instructions:
- Prepare the curd base:
- Take curd in a bowl and add a little water and salt.
- Whisk it well until smooth and creamy – make sure it’s not too thick or runny.
- Make the tempering:
- Heat oil in a pan.
- Add mustard seeds and let them splutter.
- Throw in the sliced shallots and sauté until golden.
- Add curry leaves and broken dried chilies, stirring quickly.
- Turn off the heat, then add turmeric and chili powder (if using). Stir to combine.
- Mix the curry:
- Pour the tempering into the curd mixture and stir everything together.
- Serve and enjoy:
- Spoon this over your hot rice, and enjoy the easiest, tastiest curry!
