  • Easy to make with pantry staples and boiled potatoes

Ingredients

For the Filling

  • 1 teacup cooked & shredded boneless chicken
  • 1 onion, finely chopped
  • 1 green chilli, finely chopped
  • 5–10 curry leaves
  • 1 small piece ginger, smashed
  • 3 garlic cloves, smashed
  • Salt, to taste
  • Spices:
    • ¼ tsp turmeric powder
    • 1 tsp chilli powder
    • 1 tsp meat masala (cinnamon 1 inch, cardamom 2, cloves 4, pepper 5, fennel seeds 1 tbsp — powdered)

For the Potato Layer

  • 5 boiled potatoes, peeled & mashed
  • Salt, to taste

For Coating & Frying

  • 1 cup bread crumbs
  • 2 tbsp coconut oil or any cooking oil

Method

  1. Prepare the Chicken Filling
Heat oil in a pan over medium heat. Add chopped onion and sauté until soft and translucent. Add curry leaves, green chilli, ginger and garlic; sauté for about a minute. Add turmeric powder, chilli powder and meat masala; mix well. Add the minced chicken and salt, and sauté until well-combined and the oil begins to separate from the mixture. Set aside to cool.
  2. Mash the Potatoes
Peel boiled potatoes and mash them smoothly in a bowl. Add a pinch of salt and mix thoroughly.
  3. Shape the Chops
Take a small portion of mashed potato and roll into a ball. Press gently to form a cup shape. Fill each potato cup with the prepared chicken mixture. Seal the edges with more mashed potato and roll again into a ball. Flatten gently into a round patty shape.
  4. Coat in Bread Crumbs
Roll each patty in bread crumbs to coat evenly on all sides. Ensure a good coat so they fry crisp.
  5. Pan-Fry
Heat coconut oil (or chosen cooking oil) in a pan over low to medium heat. Carefully place the coated patties in the pan and fry for 2–3 minutes on each side until golden brown and crispy. Remove and place on a plate.
