1. Cooked Rice – 1 Cup
2. Roasted Rice Flour – 1 Cup
3. Ragi Flour – 1 Cup
4. Ginger – 1 mall piece
5. Small Onion – 3 or 4 (sliced)
6. Green Chilli – 2
7. Curry Leaves – 12 leaves
8. Grated Coconut – 1 Cup
9. Salt – To taste
10. Turmeric Powder – ½ Teaspoon
11. Cumin seed powder – 1 Teaspoon
Make a smooth paste of the cooked rice and pour into a bowel. Add rice and Ragi flours and mix well pouring some water. Be careful of not adding excess water. Mix all the other ingredients to the flour and make a thick batter similar to dosas or cake.
Place a dosas or Appam pan on the stove with low flame. When heated apply some ghee or any oil and pour one or two spoons of batter, spread in circular shape and cover with a lid. After few minutes lift the lid and see if the top is cooked (when cooked all the wet batter will be dry) If ready turn it and cook the other side uncovered. Remove from the pan and place in a serving dish. Repeat the whole method again and make many Appam until the batter gets over. If few are sufficient for you, could refrigerate and preserve the batter for the next day. Enjoy the tasty and healthy Appam with some chutney or any veg or non-veg gravy.
