. Cooked Potato – 4 nos (Peel and smash)
2. Finely Chopped Onion – 1(Optional)
3. Curry Leaves – 5 leaves
4. Ginger – 1 Piece
5. Garlic – 5 Cloves
6. Green Chilli – 3 nos
7. Turmeric Powder – 1 Teaspoon
8. Pepper Powder – 1 Teaspoon
9. Salt – To Taste
10. Egg – 1
11. Oil for frying – 2 Table spoons
Peel and smash the potatoes. Season onion, garlic, ginger, green chillies and curry leaves in a pan with one Table spoon coconut oil. Add pepper powder, turmeric powder and salt, sauté for 2 minutes and add smashed potatoes; sauté till oil begins to show up. Remove from fire and allow it to cool.
On reaching room temperature, make balls and form any shape. Beat the egg and dip each ball in the egg and fry in a pan with heated oil. When both the sides turn golden brown your potato vada is ready.
Now steam and cut the wheat or multigrain bread (Paw /bun) apply some butter if desired, insert the vada inside and serve hot. Your family will enjoy the yummy vada bun/pav. This is a very easy and tasty snack for your kid’s tiffin box.
