This is the jack fruit season in Kerala and we make lots of dishes with raw as well as ripe jack fruits. This is a unique dish which I made and its simply yummy and soft as icecream. All must try it up if you have few pods of ripe jack fruit and rice flour. This is not that hard jack fruit, its the soft variety. I like it because its very easy to open and take the pods out and is very sweet. You can use the hard verity also.
- Ripe Jack Fruit Paste – 2 Cups (Take the pods of jack fruit & grind in mixi without the seeds)
- Melted Jaggery – 4 Table Spoons
- Rice flour – 2 Cups
- Cardamom powder – 2 or 3 pinches
- Cumin seeds (small jeera) powder – 1 Teaspoon
- Salt – ¼ Teaspoon
- Ghee – 1 Teaspoon
- Cashew nuts – For decoration
Mix 1 to 6 ingredients together, blend it very well and make a smooth batter (Beat in mixi). Salt should be used only to balance the sweetness of jaggery; it should not be too much or else the taste will be spoilt. Grease a dish with ghee and keep ready for steaming. Those who like the taste of ghee can add more but not too much. Pour 1 table spoon Jaggery and spread it at the bottom of the dish. Pour the batter into the dish, decorate with cashew nuts and keep for steaming.
After 20 to 30 minutes lift the lid and poke a fork or knife and see if its cooked well. When ready switch off the stove and allow it to cool. Then make pieces and serve. Waah! Waah! It is such a lovely desert to cherish. Make it at least once during jack fruit season and you will always want to eat more.
