Idinchaka Cutlet

Idichakka-Stir-FryHello friends, here I am with a rare recipe….Have you heard of cooking and eating tender jackfruit (Idichacka in Malayalam)?? Since it is jack fruit season in India, you can find tender jack fruits on trees. So I thought this is the best recipe for this season of fasting or Lenten season for Christians.

Ingredients

  1. Idinchacka/ tender jack fruit – 1
  2. Chick Peas -1/2 Cup
  3. Big Onion – 1
  4. Coconut – 1 Cup (Optional)
  5. Green Chilli – 2
  6. Chilli Powder – 1 Teaspoon
  7. Small Onion – 4 or 5
  8. Ginger paste – 1 Teaspoon
  9. Garlic cloves – 5 to 6
  10. Turmeric Powder – 1 Teaspoon
  11. Curry Leaves – 10 leaves
  12. Cinamon Powder – 1/4 Teaspoon
  13. cardamom powder – ¼ Teaspoon
  14. Cloves Powder – ¼ Teaspoon
  15. Fennel Seeds (Big Jeera) – ½ Teaspoon
  16. Oil – 4 to 5 Table spoons

Preparation

Peal off the skin of the Jack fruit, cut into pieces and soak in water for 10 minutes then remove from water ane put in a pressure cooker, add a cup of water and salt, pressure cook for 3 whistles. Chick peas have to be socked in water over night or 6 to 8 hours. Once tender pressure cook for 5 to 6 whistles.  When chick peas are cool remove the water and grind in mixi along with Fennel Seeds (big Jeera), without adding water and keep aside. Cut the onions into fine pieces and place in a frying pan or cooking vessel add some oil and saute well, when oil begins to show up add curry leaves, green chilli, and all the masala as well as coconut and saute for few minutes till good smell comes out and the ingredients stops sticking to the pan.

Add more salt if needed. Put cooked jackfruit without water. Break all the bits into fine then add the ground chickpeas smash everything and saute well till it leaves the sides of the pan can add little more coconut oil so that the gum of the jack fruit will disappear.

Once ready remove the pan and allow it to cool.  In the meantime break an egg, beat and keep ready.

Make small balls of the jackfruit and form into desired shapes. Heat some oil in a pan, dip each jackfruit ball in the egg and place in the pan and cook till golden colour, turn and cook both the sides and enjoy the awesome vegetable cutlet during this fasting season.
