- Egg – 1
- Tomato – 1
- Onion – 1 medium
- Turmeric powder – ¼ Tea-spoon
- Green Chilli – 1
- Salt – ¼ teaspoon
- Pepper powder – 1 Tea-spoon
- Curry leaves – 10 to 15 leaves
- Scraped coconut – 1 Table-spoon (Optional)
- Coconut oil – 1 Table spoon
Chop onion, tomato and green chilli into small pieces as shown in picture. Beat egg till it is frothy. Pour coconut oil (you can use any oil of your choice, but coconut oil is tasty and healthy) in a pan, add all the ingredients except the egg and saute for 2 minutes,Use salt according to your taste (I used the rock salt powder and not iodized table salt)
when oil shows up well, simmer the flame and add egg, keep it covered for a minute and then remove the lid, stir well. Once all the ingredients are cooked and the egg dries up off the stove and serve with rice, roti or any healthy bread of your choice, this gives a delicious taste to vegetable salads and sandwiches also.
This quantity serves for 2. Increase the quantity of the ingredients according to number of people. Even a kid can try to prepare this recipe and eat healthy.
